It’s gonna be for a cannoli. Carlo’s bakery opened in Dallas to huge lines because of the cable show Cake Boss. I had the day off, and my family and I went down to get the first decent Italian pastry I’ve found in Texas since I moved here. I may not have come away with an IOU for an electric car, but I did have powdered sugar on my hands, and I didn’t have to pay thousands for it. Win for me!

Please don’t. Cake boss is the Guy Fieri of deserts. tons of sugar, tons of fat, portions way to large. if you were blackout drunk on a sunday morning you could stumble into any deli in Brooklyn and find better pastries.

Eh. I went to the Hoboken one a few years ago. Not that great. I know some way better bakeries in Clifton and Manhattan. I’m sure there’s many more.

And most of the show cakes are just rice kryspies and fandant.

Yeah, but I’m not in Brooklyn. I’m in Dallas. If I want a sfogliatelle, this is the only place I can go. They may not be the best I’ve had (and tbh they are not bad), but in context, they’re the best there is.

Yeah, but in Dallas, they're all there is for an Italian bakery. I've been here 15 years, and I've always wondered why we have every kind of food chain, retail outlet, and scores of fantastic restaurants, but I can't buy a sfogliatelle. Until now. If I'm back in CT, I'll throw a stone and go into the first bakery I hit without a wait (and maybe get better), but here I'm glad to wait in line on a sunny day.

I understand. I’m in NC, but I was born in New Jersey and raised by New Jersey-Italian parents (although our New Jersey Italian is a little different, my great grandmother was from Italy and only came to the states in 1946, so isolated from the traditional Jersey-Italian, ours is more Italian than Jersey, but still Jersey).

Although the Raleigh region is home to tons of northern transplants like myself, so we have a few good bakeries.

Yeah, and my Bridgeport-derived Italian is probably no different. I wouldn’t try to say anything Italian in Italy for fear of being deported. But my vocabulary works well enough at family reunions (to be fair, I only remember a few words, and they're all to do with food).

And all the time I lived in Ann Arbor, I never even got a whiff of a good cannoli. The midwest is pretty bleak for Italian pastry, except possibly Chicago (although I cannot confirm). There is a huge untapped market, which I guess Carlo’s is exploiting in Dallas and elsewhere. They don’t have to be the best; they’re still raking in the $$ because people like you and me are starved for the good stuff.
